Buffalo Lemon Pepper Sweet Tea Chicken Wings

Ingredients

  • 2-3 lbs Whole Chicken Wings
  • ½ cup Spicceology Unsalted Caramel or Raw Cane Sugar
  • ½ cup Spiceology Buffalo Lemon Pepper
  • 1 cup Unsweetened Tea
  • 2 cups Water
  • ¼ cup Brown Sugar

Directions

  1. We will be both smoking and frying these wings. In a large Dutch oven, bring neutral frying oil to 350 degrees. Preheat the smoker to 225 degrees.

  2. In a medium mixing bowl, combine Unsalted Caramel and Buffalo Lemon Pepper and set aside.

  3. In a large mixing bowl, toss 1/2 cup of the Lemon Pepper Caramel blend with the full chicken wings and let rest for 10 min.

  4. In a small sauce pan, combine the remaining 1/2 cup of the blend, 2 cups of water, 1/4 cup of brown sugar, and juice of 1 lemon. Bring to a boil and reduce to 1 cup.

  5. Whisk in the unsweetened iced tea and let rest.

  6. Place wings on the smoker and smoke at 225 degrees for approximately 2 hours or until internal temp is 160 degrees.

  7. Remove from the smoker. Submerge in fry oil and fry for 2 min until crispy and 165 degrees.

  8. Toss in Sweet Tea Sauce and serve.
