Greek Freak Mini Turkey Meatloaves

Ingredients

    Meatloaves

    • 1 lb ground turkey (93/7)
    • ¼ cup panko breadcrumbs
    • 2 Tbsp whole milk
    • 1 large egg, lightly beaten
    • â…“ cup crumbled feta (block feta, hand-crumbled)
    • ½ cup baby spinach, finely chopped
    • 1 Tbsp red onion, grated
    • 2 cloves garlic, minced
    • 1 Tbsp Spiceology Greek Freak Seasoning
    • 1 tsp lemon zest
    • 1 Tbsp olive oil, divided
    • 1 tsp Spiceology Greek Freak Seasoning, for dusting

    Greek Freak Drizzle

    • ½ cup plain full-fat Greek yogurt
    • 2 Tbsp cucumber, grated and squeezed dry
    • 1 Tbsp lemon juice
    • 1 Tbsp olive oil
    • 1 Tbsp fresh dill, chopped
    • 1 tsp Spiceology Greek Freak Seasoning
    • 1–2 tsp water, to thin

    To Finish

    • ½ tsp Spiceology Greek Freak Seasoning
    • 1 Tbsp fresh dill, chopped, for garnish
    • 4 lemon wedges

    Directions

    1. Preheat the oven to 400°F (204°C). Brush a rimmed sheet pan with 2 tsp of the olive oil and set aside. In a large bowl, stir together the panko and milk and let sit 5 minutes to soften.

    2. While the panko soaks, make the Tzatziki Drizzle. Stir together the Greek yogurt, cucumber, lemon juice, olive oil, dill, and 1 tsp Spiceology Greek Freak Seasoning. Add water 1 tsp at a time until it drizzles easily from a spoon. Cover and refrigerate while the loaves bake.

    3. Add the ground turkey, egg, feta, spinach, red onion, garlic, lemon zest, and 1 Tbsp Spiceology Greek Freak Seasoning to the soaked panko. Mix gently with your hands just until no dry spots remain — overmixing makes dense, tough loaves.

    4. Divide into 4 equal portions (about 5 oz each). Shape each into a compact oval, roughly 4 inches long, 2 inches wide, and 1½ inches tall, and set on the prepared pan 2 inches apart. Brush the tops with the remaining 1 tsp olive oil and dust with 1 tsp Spiceology Greek Freak Seasoning.

    5. Bake 20–24 minutes, until the tops are golden and the center of each loaf reads 165°F (74°C) on an instant-read thermometer.

    6. Rest the loaves 5 minutes so the juices settle, then dust lightly with ½ tsp Spiceology Greek Freak Seasoning. Give the drizzle a quick stir (add a few drops of water if it has tightened up), then plate each loaf, drizzle generously, scatter with dill, and serve with a lemon wedge.
