Cowboy Candy Fried Chicken Thigh

Ingredients
- 1 quart frying oil
- 1/2 cup Spiceology Cowboy Candy seasoning
- 4 Chicken Thighs, Bone-In Skin-On
- 2 Tbsp Salt
- 2 Tbsp Extra Virgin Olive Oil
For the Dredge
- 2 cups Flour
- 1 tsp Baking Powder
- 1/4 cup Spiceology Cowboy Candy seasoning
- 4 Eggs, Scrambled
Directions
In a large mixing bowl, season the chicken thighs with the olive oil, salt and ½ cup of Spiceology Cowboy Candy. Mix well to run blend evenly across all four thighs.
Marinade for a minimum 1 hour (12 hours preferred).
Heat frying oil to 350 degree F.
Prep two medium size mixing bowls. One bowl with flour, ¼ cup of Spiceology Cowboy Candy, baking powder from the dredge list. The second bowl with the raw scrambled eggs.
Dredge the chicken thighs in the flour mixture then into the egg and then back into the flour mixture.
Set on a rack in a sheet tray and sit at room temp for 15 minutes.
Doing 1-2 thighs at a time, lay the dredged thighs in the oil.
Fry for 12 minutes turning the thighs every 2-3 minutes.
Remove from oil and toss in a bowl with Spiceology Cowboy Candy blend.
Allow the oil to drain off the thigh and then serve.
